Levi’s back with a book

Reggae singing celebrity cook Levi Roots has published his first cookbook, the Reggae Reggae Cookbook! I haven’t bought it yet but I had a glance a few days ago and it looks great. It’s going to be a massive hit for lovers of Caribbean food and food.
I applaud Levi (whose real name is Keith) because he’s a true example for young black people in this country who doubt their ability to succeed. In a recent interview in the Observer Food Monthly, he said that refused to change to suit corporate tastes; “At first, people thought the logo was too Rasta. Too Jamaican. Too black. But I thought ‘to hell with them’. That’s me.”
Big up Levi! Check out the book, it’s available on Amazon and hopefully will hit the Caribbean soon.
Here’s a wicked fish recipe from the Reggae Reggae Cookbook. Levi says Jamaicans are into fish and okra and “Fish and festival is the boom.”
Seriously special reggae boat fish
Serves 2
500g sea bass
¼ tsp ground black pepper
¼ tsp salt
1 tbs olive oil
1 large fresh thyme sprig
1 large spring onion (scallion), green end only, chopped
1cm piece root ginger, peeled and sliced
½ garlic clove or more if you like it, roughly chopped
1 small carrot, peeled and cut into lengthways slices
¼ onion, roughly sliced
2 okra, ends cut off and sliced lengthways in half
¼ of christophene, peeled and sliced lengthways (or 50g regular potatoes)
1 Scotch bonnet chilli, deseeded and sliced into rings
1 tsp Fiery Guava Dipping Sauce
Method
1. Ask your fishmonger to scale the fish for you. Gut the fish into the boat shape, then rinse under cold running water.
2. Season with salt and black pepper, and place on a large sheet of foil. Brush the fish inside and out with olive oil to keep it moist.
3. Push in the thyme, bash the spring onion to release the flavour and lay in the base of your boat. Arrange the ginger slices in the fish and in the head. Arrange the garlic on top, then arrange the carrots in the boat.
4. Scatter over the onion and arrange the okra and christophene or potatoes inside. Finish with the chilli rings. Smother over the Fiery Guava Dipping Sauce.
5. Wrap the fish in the foil, and either cook at 180°C/gas 4 or barbecue for about 30 minutes until the fish and vegetables are tender.

This looks great. Is there a big difference between the taste of potatoes and christophene? I’ve never heard of it before.

I think you are making a collection of Mikes. I also have been a fan since Dragons’ Den and I recently saw that his marketing efforts have expanded with a Reggae Reggae Subway deal. Great stuff.

I just got back from my honeymoon in Jamaica, we loved the Caribbean food and culture there. Every restaurant on the resort had a great variety of Caribbean food at any time of the day. I especially enjoyed the jerk chicken and jerk pork as well as the red stripe beer!

Angelina somehow kicks EVERYONE’S butt, without exception, even though she weighs less than half of all these highly trained men. Also, apparently she can fly and has spiderman-like qualities. They obtained her jumping onto trucks from overpasses and scaling the walls of an elevator shaft by simply jumping down on to small ledges. It absolutely was ridiculous (unless we’re watching X-Men and she has these special powers (but we’re not).

Absolutely love Levi Roots, just shortly after he’s sauce was launched in Sainsburys. I found his mobile number on his website, and gave him a call. And all I can say is what a lovely humble man he is. The reggae reggae sauce is very nice as well, go Levi!
Has anyone seen the youtube videos of him cooking at home with he’s family? It really is a must see.
